Tonight’s dinner — a quick jambalaya with smoked turkey sausage — called for a beer that could cut through the spicyness of the cajun rice and complement the smokiness of the sausage.
My choice, having recently returned from the Czech Republic: Radegast Premium.
Its mild hoppiness for a Czech Pilsner, while not a match for Pilsner Urquell, actually worked well with this dish. The slightly spicy hop character complemented the smoked meat, and the soft breadiness of the malt mingled well with the beans/rice. Best of all, the palette-scrubbing carbonation level of the Pilsner beer style cleared the way for my Belgian chocolate chip cookies (but that’s another post).
