Brewer’s Log: Colon Blow Organic IPA

I brewed this beer to see how many different grains I could use and still produce something drinkable. All of the flaked grains came from my local farmer’s market.

For 5 gallons (75% efficiency):

Grain Bill
5.00 lbs. Pale Malt (2-row)
1.00 lbs. Biscuit Malt
1.13 lbs. Flaked Rye
1.00 lbs. Flaked Corn
1.00 lbs. Flaked Oats
1.00 lbs. Flaked Soft White Wheat
0.50 lbs. Flaked Quinoa
0.38 lbs. Flaked Kamut

Hops
0.75 oz. Pacific Gem (16.5%) 50 min.
0.25 oz. Pacific Gem (16.5%) 10 min.
0.30 oz. Pacific Gem (16.5%) 5 min.

Yeast
White Labs WLP001 California Ale

Mash grain and adjuncts at 152F for 60 minutes. Add first hop addition when wort begins to boil. After 40 minutes, add second hop addition and Irish moss. The last hop addition goes in 5 minutes later. After 50 minutes total, knockout to chiller, and pitch yeast. Will be in primary fermentation for about 6 days, and then go for a 1 or 2 week secondary fermentation.

OG: 1.053 (13.1P)
Anticipated SRM: 9.9
Anticipated IBU: 53.0

Kegged and force-carbonated

Tasting Notes
The Pacific Gem hops were somewhat harsh for the first couple of weeks — grassy and astringent.

At 2 months, the harshness settled out and left a really nice IPA. The beer has an pleasant body as a result of the different grains — I think this porportion of adjuncts worked well.

At 6 months, the hops have mellowed tothe point it technically might not be an IPA any longer, but it is a *very* good beer nonetheless.
