Tuesday was a brew night, and the 2006 Holiday Ale was on board for production.
This year’s holiday will be less aggressively spiced, and hopefully well-rounded. Ginger, cinnamon and coriander all make appearances, but the Columbus hops and Belgian yeast strain promise to make this year’s vintage unique.
The far left carboy also has a Belgian yeast in it — for a chocolate stout! It’s going to be a hybrid beer that should be tasty, but defy categorization.

It’s so funny - I was considering doing the same thing with a stout! I thought about using either a hefe strain or belgian strain with a darker brew like a imperial chocolate stout - thought the fruitiness of the strains would go well with the dark notes.
Hmmm… time for me to get on it … Randy just brewed a Brooklyn Choc Stout clone …
